We develop safe, innovative and sustainable food processing technologies that help the food industry deliver healthy products, while reducing environmental impact.
We explore and develop advanced and existing food processing technologies that contribute to safe, sustainable and efficient food chains. Our facilities include lab- and pilot-scale equipment, alongside a wide range of analytical tools, sensors and models.
At our lab, we apply gentle preservation techniques such as high-pressure pasteurisation (HPP), pulsed electric fields (PEF), plasma processing and mild heat treatment, aiming to reduce thermal impact and maintain product quality.
We support industry partners to improve resource efficiency by reducing energy and water use, optimising yield, and extending shelf life. Our experts also focus on mild separation methods to recover high-quality ingredients sustainably, and we develop structuring technologies like 3D printing, extrusion and shear cell technology—for example, to create plant-based meat analogues.
