Sensory Science and Eating Behaviour

Understanding how sensory properties influence food choice, intake and health. Sensory Science and Eating Behaviour, with chair Ciaran Forde, functions as a bridge between consumer, food, eating behaviour, health and well-being. The main research challenge of the Sensory Science and Eating Behaviour group is to better understand eating behaviour from a sensory, physiological and psychological perspective.
Research themes
Food structure and sensory perception
We investigate how food structure, oral processing and sensory perception influence eating behaviour.
Food-Gut-Brain
How do metabolic signals of the food-gut-brain interplay influence the physiological and neurobiological responses underlying eating behaviour?
Food preferences across the life-span
We study how food preferences and sensory perception develop and play a role in our daily life and how these sensory properties influence healthy food choices.
Education

Education by this Chair Group
At the Chair Groups of Wageningen University, we are very passionate about teaching. Our teaching staff is involved in multiple courses on BSc and MSc level for different study programs.
Our courses include aspects of various sciences. In addition, we offer courses that focus on training academic skills, such as writing and debating skills.
Publications & Projects
The research of the Sensory Science & Eating behaviour group is focused around three research lines. The research of the group is embedded in the Wageningen VLAG Graduate School (research with focus on Biobased, Biomolecular, Food and Nutrition Sciences).

Chair Holder
Ciarán Forde is Chair of this group. He leads research on how the sensory properties of foods influence calorie selection, eating behaviour and energy intake and metabolism in adults and children. From 2021 he joined Wageningen University & Research as a Professor and Chair in Sensory Science and Eating Behaviour in the Division of Nutrition and Health.
