Food-Gut-Brain

Within this research theme, we investigate how signals between food, the gut, and the brain affect body and brain responses that control eating behaviour. Understanding such processes related to taste, nutrients, hormones, digestion, and metabolismis is the first step towards explaining food choices and to improve health.
Research topics
- Decision-making in food choice and building predictive models
- The role of oral processing behavior in human metabolic, gut microbiome and metabolites response
- Food structure breakdown in the stomach

Research themes
Food structure and sensory perception
We investigate how food structure, oral processing and sensory perception influence eating behaviour.
Food-Gut-Brain
How do metabolic signals of the food-gut-brain interplay influence the physiological and neurobiological responses underlying eating behaviour?
Food preferences across the life-span
We study how food preferences and sensory perception develop and play a role in our daily life and how these sensory properties influence healthy food choices.
