WUR accelerates microbial food and probiotics innovation with a multi-stage lab-to-pilot pipeline, optimising fermentation conditions to enhance product quality, sustainability, and industrial scalability.
Fermented foods, probiotics and microbially derived ingredients are growing in demand, yet scaling production while maintaining performance and quality remains challenging. Food & Biobased Research offers a unique multi-stage pipeline for lab-based microbial process optimisation, designed to maximise cultivation productivity and ensure smooth industrial application.
Our approach integrates microbial physiology, growth phenotype screening, fermentation scaling, downstream processing and food application testing, supported by advanced equipment for pH-controlled (fed)-batch fermentations from 1mL up to 100L. The optimisation process progresses from screening platforms, to lab-scale condition testing, to 100L pilot-scale production for application trials, and finally technical transfer for industrial implementation.
By tailoring fermentation to specific microbes and refining existing processes, WUR helps industry partners achieve higher quality, sustainable, and economically viable microbial food production.
